For those of you that have asked, here it is in all of it yumminess:
150g of lemon zest cookies (I used Waitrose ones)
50g of butter (I used Clover Light)
300g full fat cream cheese
140ml of double cream
75g of icing sugar
Juice of a lemon
Crush cookies, melt butter, mix together and push base into a tin. I find that gluten free biscuits don;t crush as well as normal ones but go for it anyway. Chill for 20 minutes or so.
Beat the cheese and icing sugar in a bowl until smooth and add lemon juice.
Use an electric whisk for the double cream (not a hand balloon whisk like me, not good for fibro arms)
Mix cheese mixture and cream together, gloop on top of the base, leave to set for a few hours and enjoy!
